I don’t know about you, but I think Fall is the perfect time to pull out the crockpot and whip up a delicious soup or stew. There’s something so warm and comforting about a hot meal in a bowl! Don’t you agree?

Recipes are FAR from my typical blog content, but I’ve gotten lots of requests to share recipes, and this one is just so easy and delicious I have to share it!

The other week I was making a quick stew for dinner and I ended up making my new favorite Fall stew quite by accident! My husband, toddler, and I enjoyed it very much. This is an easy (and fairly inexpensive) stew recipe and I hope you enjoy it as much as we did!

The BEST Fall Stew (in the Crockpot)

The Ingredients:

  • 1 pound of ground beef or chuck
  • 2-3 large potatoes (peeled and diced)
  • 2 sweet potatoes (peeled and diced)
  • 1 large onion (diced)
  • 3 large carrots (peeled and coined)
  • 5-6 cloves of garlic (minced)
  • 1 can of sweet peas (juice included)
  • 1 can of diced tomatoes (juice included)
  • 8 ounce jar of tomato sauce
  • 1-2 T. Worcestershire sauce
  • 1 T. garlic powder
  • 1 T. Italian seasoning
  • 1 T. coconut sugar (this is the brand I use)
  • Sprinkle of salt
  • Beef broth (optional for extra liquid broth)

The Instructions:

Brown the ground beef in a skillet over medium heat. Once thoroughly browned, drain the fat and add the meat to the bottom of your crockpot. Peel and chop veggies and add to the burger. After all the veggies (and canned goods)  have been added, top with tomato sauce, Worcestershire sauce, seasonings, and sugar. Cook on low for 6-8 hours (or until potatoes and carrots are fork-tender). Beef broth can be added if you like more broth in your stew.

This stew is delicious topped with shredded cheese and served with buttered sourdough bread on the side. 

Notes –

I used both regular potatoes AND sweet potatoes for variety and color. You could choose one or the other if you don’t want to use both.

It’s the garlic, onion, and seasonings that give this crockpot stew a delicious flavor. If you’re not sold on the garlic, feel free to cut back – although it truly makes the dish delicious (and healthy!).

For the peas, I used a 50 cent can of sweet peas from Aldi. Because my stew didn’t have tons of liquid, I added the whole can including the juices. You could use frozen peas instead of canned, but then you may need to add some more liquid (either beef broth or some water).

The coconut sugar adds some mild sweet notes to the stew. Feel free to omit that completely or replace with brown sugar if that’s your preference.

My Crockpot –

I’ve been using and loving a Hamilton Beach crockpot since my husband and I got married! It’s your standard size crockpot – not too large and not too small! I use my crockpots so much, it’s the #1 thing I recommend for new brides, or those who are putting together a wedding registry!
